Bacon and Pineapple

I was in Lidl, and bought a pack of "Bacon Mis-shapes", and I also bought a pineapple. Now, you all know what a pineapple is, but perhaps I should explain that Bacon mis-shapes are thickish slices of bacon, not quite handsome enough to grill or fry and serve as gourmet food. I have an idea that I should cut both the meat and the pineapple into chunks and cook them together, perhaps in a casserole.

My challenge to you is to help me develop my idea a bit. What else should go in, and what might you add to round out the flavour? Currently I am thinking of chucking in an onion, some vinegar, and chopping in a red pepper (partly to give the dish good colour).

    Any advice?
