brake warning light issues

The other morning , first cold morning we've really had and also the morning of my bloody NCT, a brake warning light came on,
it said "STOP brake warning, check manual"
I checked the manual it said it may be a brake fluid problem, the thing is that it hasn't really happened since - only once or twice when the weather seems to be a little colder.
I know i have to get it checked but im just interested to see what it possibly is.

I take it you've checked the brake fluid level?

As your pads wear the level of brake fluid drops, the low level triggers the warning light that you have seen.
On a cold day the fluid is probably denser ie less volume than on a warmer day.
So Check your brake fluid reservoir and see where the level is, chances are it is low, if so add the RECOMMENDED fluid for your vehicle.
Don't overfill it brake fluid is excellent paint remover.
