I had three OS's on a development machine XP, Windows Server 2003 and Ubuntu using Grub Loader as the boot file. I installed Windows 7, against my better judgement, and it set the boot loader to it's own format. So now I am only offered the Windows OS's on boot up. What is the simplest way of getting Ubuntu into the Boot list, bearing in mind that the Windows 7 boot file is a binary file not an 'ini'.

Alternatively, you can restore GRUB via these instructions.
