any way to rotate photos so they always open orientated the way you want them when the phone is upright, rather than having to turn the phone around??

Not that I've been able to find. It's a tad annoying at times. But impressive to people who haven't seen it before :p

No, but you can "lock" the orientation. For example, turn the phone and let it go to a landscape view, then tap and hold the photo until you see the "copy" pop up show up. Let go and the orientation is locked for that photo - you can turn the phone all you like and it'll stay that way.

The problem is it only remembers the "lock" on that photo so it won't work for the next photo you swipe to or next time come into the photos app. Still, neat if you are trying to show off a photo in a particular orientation and don't want it moving while you show it to people...
