I have a piece of ground that has bindweed in it - just wondering if I put a large pieve of carpet on it for a few months (over winter) will it kill the bindweed - dont really wanna use chemicals as its a veg plot....

Unfortunately bindweed is dormant after the first frost. It can come back from 1cm of root and is a complete pain.

You can either cover with carpet (Or a thick layer of newspaper and mulch) and leave dormant for ~2yrs or put canes for it to climb and dip in a diesel round-up mixture at the end of next summer.

The second option is foul but works, up to you.
