Marinate for at least an hour (overnight in the fridge is better).

    2 tbsp Soy sauce
    1 tsp wholegrain mustard
a dash of sunflower or olive oil
    a crushed clove of garlic
    1 tbsp of honey
half a teaspoon of chilli powder or a sliced chilli, if you like it hot.
Grill or bake in the oven.

Brown both sides in oil and butter. Remove to a roasting tray. Caramelise onions in the same pan with some more oil. Scatter over the chops, along with some sliced garlic, picked fresh thyme, and a bay leaf on each chop. Cover with tin-foil, bake @ 180c for 30-45mins. Serve with mash, and peas.
