Mixer recording into PC or DAT

Looking to get some tracks down at home and record several vocals, keyboards and guitars. Was thinking about just getting an 8 channel behringer or Alto mixer and recording straight out of that rather then recording through cubase or protools. Would that setup work well enough? At least good enough for two or three people to jam with headphones on and record the results...

    One of these for example...

That mixer will only take two microphones.

True, something like this Eurorack might be more along the lines of what i need, would it be okay just to record the outputs of that onto a PC?

It's possible to get a perfectly good recoding that way, but it takes skill. Very difficult to do if you're also playing, but not impossible, if you're skilled.

You might make life easier for yourself by using an audio interface with 8 or more inputs. You can still record everyone at once, and do the mix afterwards.
