So I have 3 to 4 weeks to take off work....was hoping to go around Nov/Dec but could wait longer if necessary....

Thing is I can't decide where to go.....

I was thinking of 1 of the following

1, Ecuador or Colombia or a combination of the 2.
    2. Brazil (probably to the NE Bahia etc)
    3. Philippines (been before but only briefly)
    4. Vietnam (been to the rest of SE Asia but never here)

    Open to other suggestions too....

I'm looking for somewhere with a decent bit of culture/history, places to relax and good activities to do (e.g Trekking/diving biking etc.)

I speak Spanish so I like the idea of south america though i've been twice before.....

    Any suggestions welcomed....

Seeing as you speak Spanish you could go through Central America, take a tour if going solo seems too much hassle and inconvenience. Plenty tours around the 3 week mark usually starting and ending between Cancun and Costa Rica. Excellent diving spots in Belize I'm led to belive.

Vietnam is very cheap and navigable by yourself, few nice highlights like Ha Long Bay.

Plenty trips in Africa to take on a tour, plenty to see and do. 3 weeks from Victoria Falls to Cape Town or Nairobi to Victoria Falls.

Central America sounds interesting, have you been? I don't mind travelling alone at all.....

No, unfortunately not apart from a brief stay in Panama City. I plan to in the not too distant future but anyone i have spoken to who has, has said nothing but good things.
