just a little catering question

    Hi, i was just wondering how too go about and what i would need to qualifiy as a catering lecture. I have read the sicky threads, and i have understood that we cant post there, not many others have, but i dont really understand what I would need too teach catering.
    I myself am a chef in london, and as you might or might not be aware, its not really a nice life too lead. Dont get me wrong i do love it so much, but im at the stage now where i need too say enough is enough. I can work up too, and including 17 hours a day, without much/any sitting down either.:(
    I have always enjoyed too cook, but the best feeling i get is too take the young commis chef (the new boy/girl) and teach them how too cook and serve food to an incredibly high quality.
    I have the experiance, but i dont know if i have the qualifications, i would been greatful if some one could help me out.
