The pasta sauce that does be in the pasta at salad bars/deli's...

    You know the tomato sauce that does be on the cold pasta in salad bars/deli's etc. - it's like a really sweet sauce. It's nothing like the Ragu pasta sauce. Does anyone know if it can be bought in any shops in Galway? Want to make some for tomorrow and it's just not the same when I make it with the Ragu pasta sauce

    thats passata, and if you want it a touch sweeter add a little honey, and a touch beefier.. little worcester sauce.
    im giving away the family recipes now lol, got loads of italian recipes from my grandfather (he was italian)
    but passata is the one, its usually in tall jars or in a tetra pack, if you cant find it, get tinned plum tomatoes, and add the honey and worcester sauce, or if you want to be posh fresh plum tomatoes reduced to a plup, take the skins off first though!! ( heat them in salt water for 3/4 mins they peel off no problem) good luck for tomorrow:)

    Best way to make passata is to skin and seed the tomatoes.

    Make a small X on the bottom on the tomatoes with a pairing knife. drop them in boiling water for about 15 seconds and then into ice cold water to refresh, they will peel easily now.

    Half them and scoop out the seeds with a spoon making sure to keep the seeds and skin. Put them in a sieve, put some salt on top and leave them for about 15 minutes, this will drain off a lot of tomatoes water which is just packed with flavor! you can chuck out the seeds and skin now.
    chopp the tomatoes really finely and pop them and the water you drained, into a belnder and make short pulses untill smooth.
    Add a haldfull of freshly chopped basil and a teaspoon of honey for my personal preference.

    If using tinned shopped tomatoes, just dump them into a sieve and push them through with the back of a wooden spoon, this will remove the seeds, which is mildly important as the seeds are quite bitter. again, basil and honey make a nice addition.
