Rapeseed oil

    I was watching something the other day (Market Kitchen?) and he used rapeseed oil (lashings of it) as a sub for butter when making mash. Now he was using sweet potato instead of a load of king edwards, but I assume the idea is the same. I make mash sparingly and don't use butter for much else, so I've ended up throwing away the last 2 pounds I bought, but having a bottle of rapeseed oil on standby might just save my mash?

    Rapeseed oil has a rather strong, nutty flavour with a musky note. Nothing like butter - It's not unpleasant, just it has a particular flavour that I wouldn't associate with mash - It might be fine with sweet potato. I use it as an alternative to olive oil in cooking and occasionally in salad dressings.
