Is there any schemes in Ireland to insure a PS3 in case it breaks down. Note I already have the PS3 (I think some companies only offer insurance when you buy the console).

That service is a bit of a rip, they are only giving you one extra years cover for the price of 3 years. In this country all electronic goods are covered for break downs for 2 years as standard as basic consumer rights.

If it breaks down from the dreaded YLOD (it's freezing every so often so thats not a good sign!) shouldn't the Sale of Goods and Supply of Services act 1990 cover me? If a good isn't ''fit for purpose''?

Well it was fit for it's purpose for the duration of the warranty so I think there no way of getting out of the YLOD

Baldercock. The warranties offered with consumer electronics DO NOT replace your statutory rights.

The PS3 must be fit for purpose for a reasonable amount of time. This is NOT 1 year Sony warranty. This is NOT 2 years as mandated by Europe. This is UPTO 6 years as mandated by IRELAND. However, the only caveat is the only person who can specify what a "reasonable" duration per product is a judge in a court of law. If a retailer doesn't agree what a reasonable time is with you, you either accept it or go to [small claims] court.
