Try Taco Taco in the Epicurean food hall. Or Fallon & Byrne.

There's a Mexican food stall in the Temple Bar Saturday market, it's called Dona (sorry, don't know how to do a cedilla!) Theresa's. She's been able to get me things like fresh jalapenos, tomatillos and masa harina before, but she usually needs about a week's notice.

The Asia Market near F&B also sell masa harina, this brand, on the shelf opposite all the rice near the counter-end. You can use banana leaves available from both places instead of the corn husks too.

Anywhere in Cork? I find the English Market good.
