My favourite Curry Recipe

    Save money on those Indian takeaways.

    Medium/Hot Chicken Curry.

    Preparation time 30 minutes.

    2 Frying pans

    I cook the chicken and curry sauce separate from each other.

    Serve with Boiled Rice

    Ingredients

    1 red Pepper (chopped into thick chunks)
    1 Green Pepper(Chopped into thick chunks)
    3 Large Tomatoes (Chop into small pieces)
    1 large Onion (Chop into small pieces) & 1 small onion (Chop into Large Chunks)
    1 Green Chilli Pepper( Chopped thinly, add seeds for extra hot curry)
    3 Chicken Breasts(Chopped)
    1 table spoon Tomato Puree
    2 cloves garlic (Finely Chopped)
    1 1/2 cup of water

    Spices mixture – All spices available in spice section of supermarkets
    1/2 tbl spoon Salt
    1/2 tbl spoon Turmeric
    2 tbl spoon coriander flakes
    1 tbl spoon Hot Chilli Powder
    1 tea-spoon Ginger powder

    Fold the all spices together in a bowl.


    Step-by-Step
    1. Prepare all ingredients listed above so everything can be done in order.
    2. Prepare boiled rice at the same time as you start. Boil rice from cold water and leave to simmer for 15 minutes. Then turn off heat and leave lid on for another 15 minutes.
    3. Add olive oil to pan and gently fry diced chicken breast for 4/5 mins. till all white in colour.
    4. Add cup of water to chicken and boil water and then simmer until water if nearly boiled away. Add Garlic cloves when nearly boiled off. Should take 20 minutes.
    5. Pour olive oil into other frying pan and add chopped onion. Gently sauté the onions till they become translucent. 4-5 minutes
    6. Add chopped tomatoes and tomato puree and continue to stir until the juice from the tomato start to create a gravy. 4-5 minutes
    7. Mix in spice misture and continue to stir and cook for a further 2 mins.
    8. Add ½ cup water to mixture and stir and cook for another 5 mins on medium/high heat
    9. Add in chopped peppers/Green Chilli Pepper & large onion chunks.
    10. Continue to cook for a further 8/9 mins.
    11. At this points the water from the chicken will almost have been boiled away.
    12. Add curry mixture to chicken pan and cook until curry sauce become like a gravy.
    13. Rice should be ready by this time.
    14. Serve together
    15. Always nice with a cold beer. :)

    Looks good but I don't eat chicken anymore! What other meat/fish would you recommend for these ingredients?
