Hoping for a career change, even though what i have now isn't a career. But i am hoping to get myself one.

I am hoping to do veterinary nursing next year where i also need to be employed with a vet. Although i have another year to look for work i would like to start in october. And be available for them, should they want me to start the week after, a month after or 6 months after.

The only thing relevant i have is a distance learning course in animal care and some voluntary work at a dog shelter. Im hoping this will show them i am at least interested. So i obviously mention all this?

Where do i put the voluntary work? Under work experience or under a section of its own? Do i put the distance learning course under the education section? Would it be a good idea to ask the owner of the rescue kennels for a reference, also?

Do i mention the grade i got when i studied hotel management, I dont see how my grade matters in a different career?

About cover letters, all the samples of the internet has 'i am appaying for position x', so i cant be using those. Do i write them a letter telling them i want to study vet nursing and ask if they have any positions available as a trainee?
There is a place i am interested and it also has a cattery and kennels. Can i write them a letter asking for a trainee position and tell i am intersted in their cattery/kennels for a bit of extra work? Kinda like applying for two.

Sorry for the questions, but i am clueless.
