    Isn't it partially fermented, or already soured or something? How much does the best-before date matter?

    If it is best before - then it doesn't matter but I'd imagine it's use by which I'd give a bit more weight to.
    Most of the "buttermilk" sold in cartons/bottles isn't actually buttermilk - It's a fermented product made from milk, not cream.

    The best before date matters. It's sour milk (or cream), but not soured milk. ;)

    You can make your own easily with lemon juice and milk.
