    There's quite a number of neat mobile food companies in Los Angeles, you might find some innovation to copy/adapt there.

    One is Calibi http://calbibbq.com, another is Kogi http://kogibbq.com/, and a write up on the phenomenon is at http://www.latimes.com/theguide/summer/food/la-fo-foodtrucks22-2009jul22,0,624490.story

    This is different to what I've encountered in other places, the food is really good, one might call it gourmet. Its so good, I've on occasion drove across the city to get it. Calibi have an online map and calender showing where they are on a specific day, so it caters to the market that plans to shop there rather than just happening upon the truck. They are not just a special events truck, rather a roving take-away. Their visibility and branding has been effective too, a lot of people have heard of them.

    Anyway, it would be interesting to know if there's a market for this kind of thing in Ireland - or even if its being done already. I've seen them in operation here several times, and often they pull in outside a busy bar or farmer's market and make a killing.
