I tried going into ranked match and quick match and searching but can't find anything. It just asks would i like to host a fight and when i do it jus searches for like 10 minutes and I just give up. I know it's not my connection or anything.

Check your NAT settings cos there wouldnt be any other reason why you wouldnt be able to host a game.

Run an xbox connection test and see if it says anything about your NAT, if theres nothing then your fine if its strict or moderate you need to fix it.

Apart from that dont know what could be wrong, you host a fight and pick your fighter and wait for someone else to hop in on the other side and pick theirs, nothing to it.

No it shouldnt take that long, unless you are hosting with some ridiculous settings..i usually got for 3 round fight with LH division..UFC only fighters.
Dont have a ps3 so cant tell you about NAT or anything for it.
