I am a Professional Chainsaw Instructor and would like to study for a certificate in education in the Southeast. Can anyone give me advice or point me in the direction of a flexible course that I can take whilst working.

Maynooth run an Education level 7 programme, It's not a teaching qualification per say, but it does give you a start in the right direction. I think alot if it is done by assignment.

I can't recall the exact name of the course, but I know a few that have done and speak well of it.

I looked on the NUI Maynooth website but didn't find any thing to help you there.
