I would be very surprised if they had many bikes left in stock, if any at all. Especially in the common sizes. Drop into the stop and check, I'm not sure how good they are at answering the phone.

I was in with a mate a couple of weeks ago and you don't have to necessarily pick exactly what's in the pack. You buy a bike and get 15% off whatever other accessories you buy or something similar.

Well if you're worrying about the brand, don't, it's fine, they sponsor one of the teams in the Tour de France.
The bike itself though, is very much on the entry level. The gears are the lowest of the low in the shimano range, and I would be advising you to avoid them, and go for a bike with at least 'Tiagra' if not '105' model gears - smoother, quieter, more reliable, don't (need so much adjustment), lighter etc. It's also only 8 speed (8 cogs on the back) whereas 9 and 10 are much more common these days.
The Giant Defy 3, for less money has better gearing system, albeit the second lowest of the range, 'Sora', but would still be an improvement over the R-Lite200
