I know in Brazil for example the official currency is Real, but do they also accept American dollars in shops/restaurants?

Not really... It's not an official currency. Someone might take it as a tip or something like that, but not as payment in shops...

In Brazil anyway, I just changed whatever currency I had into Real or used my ATM card to withdraw Real.

The only place where it was really a good idea to have dollars was in Venezuela, as you get 2 to 3 times the local currency that you'd get through the ATM. Otherwise, just get local currency at an ATM really, maybe just with some dollars for emergencies.
