I'm wondering how do i get around this:

I got accepted into DIT, I deferred it a year ago and just received and accepted my CAo offer for entry this year. I'm going in this september. Now, I'll be travelling to Europe this August for a short break, and I need a visa. I have to of course show I'm a student and will come back to Dublin. What documents will i show, i haven't enrolled yet so, will the acceptance offer suffice? thanks for the response.
