    Anyone know how to pickle their produce, say some scallions or beetroot?

    I grow beetroot myself and always pickle it. After boiling the beet, letting it cool a little and peeling it, I cut it into slices. I make up a solution about two thirds vinegar one third water (basically dilute the vinegar to taste). Get some jars and make sure you have cleaned these before, add about one third of you vinegar/water solution, add in your beet (or whatever) until full, add in more liquid as needed to cover the beet. I use clear malt vinegar for this.
