Dun Laoghire sounds good, especially if the weather is nice though I reckon a trip to Howth is nicer, maybe walk along the path as far as Sutton- super views on a nice day. Alternatively a walk around the park in Kiliney always goes down well.
Seeing as you are going drinking for the rest of the afternoon why not bring them on a tour of Dublins classic/Victorian/Edwardian pubs. Start at Ryans in Parkgate St then get a Luas to the Cobblestone in Smithfield ( live music usually starts around 8ish) then a taxi to Doheny & Nesbitt on Baggot, walk to O'Donoghues down the road and then Cafe en Seine before finishing up somewhere like the Arlington Hotel on OConnell bridge which has live Irish dancing every night of the week.
That way you avoid the tourist pubs of Temple Bar but get to show then some cool watering holes. Long Haul is also a good one as is Mulligans on Poolbeg St.

Trinity sucks, The National Archaelogical Museum is so much better. And it is free with no queues.

Might be a little far south but this is excellent. Been several times with visitors and they loved it too.
