healthy mushroom soup ideas?

    could i make it with brown flour?
    i have a carton of oaty cream substitute that i was thinking of using but now i am wondering if i could use the light coconut cream i have in my cupboards.....

    usually i make it with mushrooms and onions sauteed, might add a potato , garlic and pepper and then chicken stock and a good splodge of creme fraiche, and whizz it all up.

    should it look SO grey and sinister? is it the type of mushroom im using? (usually whatever i grab in tesco not too big and not too small)
