The tennant in the house we rent out has moved out recently and left a €700 gas bill behind. The gas supplier have tried to get the money from her but she would not pay and they are now coming to us looking for payment. What are our rights here and what is the best way to go about getting this money from the tennant?

Thats at least partially what deposits are for. You should try to get it paid form the deposit- if this is possible. Otherwise- if the supply is cut off- a reconnection fee is necessary......

If the deposit has been repaid to her, and she is unwilling to pay the bill- its a civil matter. The company is fully within its rights to cut off the supply however.
