    Have just got a nice lump of venison and need some ideas on sauces and/or gravies to go with it, anyone any good recommendations/recipes?

    Mushrooms are out though bleurghhhhh

    bitter chocolate jus is lovely with venison or cook down some red onions in balsamic vinegar until really soft then add in a little brown sugar.

    or pickeled cabbage is nice with venison

    The OH will like the pickled cabbage option ;) I like the sound of the bitter chocolate sauce, maybe some chestnuts thrown in.

    Just make a decent stock, reduce it by half, chop some chesnuts, saute in unsalted/clarified butter and shallots, stock in on top, simmer 5mins, mmmm.

    Shred some savoy cabbage, fine dice some root veg. saute the veg in a little butter, add the cabbage, at the end a touch of double cream. season. mmmm

    Roast some celeriac, mmm
    Puree some sweet potatoe again mmm.

    Maybe its just the venison that makes me go mmmmm?:D
