What's the "unknown error", a code should have appeared with that message, such as: "iTunes could not connect to the iPod "_your ipod_" because an unknown error occurred (0xE8000025)."

Try this, although I don't think it'll work...
    Connect your iPod to iTunes.
    Hold down Power and Home.
After the iPod turns off, wait 1 second, then release the Power button, still holding the home button.
Wait about 15 seconds, give or take.
iTunes should recognise an iPod in recovery mode, even though you will see nothing on your iPod's screen.
Shift + Restore to a firmware of your choice.

I actually think you are going to have to give apple a call to get this sorted, although another option would be to try connecting to itunes on another system.
