MTB 26" tyres

Of the three tyres you linked to, the Bulldog is the best. The WBT is a reissued 15 year old design, it is crap unless you want to have some kind of retro nostalgia while sliding out on every corner! I've never liked Kenda, there is very little objective about tyres.

2.1 is too narrow for 'FR' use, it is fine for XC though. Other tyres you should check out: Maxxis Ignitor & Advantage, Schwable Nobby Nic.

Converting to tubeless depends on what rims you currently have or if you willing to buy new rims/wheels.

    Alright Rob,

Cheers for the reply.. on the tubeless thingy the rims on my bike are DT Swiss 420 sl... are they convertable?

That rim will need a rim strip to seal it up for tubeless. There are various ways of going about this. DT do a strip, Joe's and Stan's have kits also. Then there is Ghetto. Ghetto uses a 20 inch BMX tube, cut and folded open, to form the rim strip.

Whatever way you go, you need to search the web and find out how people have fared using the method. Apparently Stan's standard strip works fine with this rim (I dunno where to buy stan's kits though, Chain Reaction Cycles does Joe's!).

There's another guy who did a very fine Ghetto job, but it looked quite labour intensive. He trimmed the strip very precisely. I've done ghetto a few times and it has worked, but been a real bugger without having a compressor.

DT also have their own rim strip (see CRC), but your rim is not listed. A lot of the 4-series rims are listed and DT themselves say to give it a bash.
