Recipe for topside of beef?

    Hi,

    Hope someone can help me, I have a 2.2kg topside of beef which i plan to roast on Sat, problem is I have never roasted beef before so I am looking for some nice recipes if anyone has one?

    roast the beef as normal, but be sure to rub with olive oil and season, salt and BLACK pepper.

    Cooking to temprature is your own choice obviously but i prefer mine rare.

    When you make the sauce, chop some sundried tomatoes and tarragon into it right at the END.

    Some roasted root veg, tossed in honey and some flufy mashed potatoes.

    I do yorkshire puds but thats not to everyones effort levels.
