I got a 2g 16gb ipod touch today. I was planning to register it etc tonight but I've had two people tell me that if I register it with Apple I won't be able to jailbreak it in the future when this becomes a possibility. Is this true? It seems like you can do very little with it without registering it.

Yes register it, it won't stop you jailbreaking it and you can JB the 2g ipod touch now in less then a few minutes ;)

I'm pretty sure it's in no way illegal. If you search quickfreedom you'll find it no problem.
