Venison - what to do with it?

    Any suggestion with what to do with a hunk of vension? Probably enough in it to feed 4/5 people. If anybodys got some nice roasting recipies or tips that would be great!

    Stewing or braising works well - it can be a bit dry otherwise, I find.

    Cook very slow.

    Get leeks, onions, carrots, parsnips and spuds. Chop and put into pot. Add a couple of cloves of garlic. Place meat on top. Add Vegetable stock and some wine, red or white.

    Put in oven at 250 until this temperature is reached. Then turn oven back to 100 and leave in either overnight or for a couple of hours.

    Powerful stwe and very easy to do.

    Wrap it in bacon and roast it in the oven. It needs the bacon to stop it going dry as it is such lean meat.

    Or pot roast it. Put strips of bacon in the pot and crisp up. Remove from pot and brown the venison. Put everything back into the pot and cover with full fat milk, will probably take at least 1.5 litres depending on your pot.

    Put in the oven and let stew for about 2 hours. Add mushrooms in the last half hour. Don't worry if the milk looks like it has curdled, once it's cooked, remove the venison from the pot and place it on the hob. Whisk up the sauce and add red current jelly to taste.

    You will end up with the best tasting sauce ever. Serve with boiled potatoes, green beans and or carrots. Mushrooms are optional.

    There's only two ways to cook Venison, Either very hot and very fast or low and long.

    Slow roasted or braised it's amazing.

    What cut of the animal is it?
