I want to output a standardSKy+ box to an Onkyo Amp. The sound is easy via optical but whats the best option for video to the amp? The Amp doesnt have a SCART conection.

Sky+ box has s-video connector. This would be the optimum connector if you are connecting to an AV amp for video switching purposes. Providing your amp has s-video inputs!
