    200 g caster sugar
    200 g soft salted butter

    beat together till almost white.

Add one by one 4 eggs, beat the mixture till smooth.

    then beat in 200 g self-raising flour.

This mixture is enough for 20-24 cupcakes, bake them on 180 C for 12-15 mins. (Sometimes you have to bake them a little longer, keep checking.) This recipe never fails, and you'll have nice, domed cupcakes.

If you want to flavour them, add finely grated lemon or orange zest to the butter-sugar mixture. Or vanilla essence.

I still work in ounces :pac:

    8oz margerine
    8oz caster sugar
Beat until pale, add 1tsp of vanilla essence

    3 eggs, beaten
12oz plain flour + 2 tablespoons of baking powder
Add these bit by bit to the marg+sugar, keep mixing until all combined.

180 degree oven for about 15 minutes, depending on how big you make them. They're cooked when a metal knife of skewer comes out clean.

    Decorate as one wishes!

Basic mix, plus 4 oz coconut. Mix all-in-one using soft butter.
