If you want to 'create' aircraft you have two options, FS and X-Plane. X-PLane is based on real-world physics, while FS is based on lookup tables. Go to http://www.x-plane.com and download the demo, it comes with Planemaker.

Warning: It's very, very addictive and quite difficult to get it right. If you have any questions, http://www.x-plane.org is the place to go for advice, or PM myself.

(NB: I don't have any affiliation, I just love X-Plane!)

You're out of luck in that case. The X-Plane demo allows you to fly your creations for 10 mins. I'm not sure about FS, maybe ask on the Avsim forum.
