Can anyone advise how much you should give a Priest to celebrate a marriage away from his parish?

If he needs accommodation and (or) travel expenses pay them plus a donation for either the charity or pub of his choice :)

We thought it best to put some money in an envelope and give it to him on the day. He's looking after our papers for us too. We thought €150 would be sufficient.
The church we're getting married in is costing us over €400 to use and they wouldn't provide a priest. Why is it so expensive?

That seems extortionate to me! I take it neither of you are local to the parish this church is located in, that might be the reason, although it's unusual for a church to provide a place for the ceremony but no priest afaik.

The €400 goes towards use of the building, heating, parking, sacristan, and alter servers. Are you getting church flowers as well for that price? We had to pay for our own flowers (I thought that was normal) but I've since learned that some churches provide flowers for the day.

Accommodation, dinner and dancing are ample compensation in my eyes.

No we don't get flowers with that. We decided not to have flowers at the church as it's very small and your not allowed put flowers on the main alter (too small).
The church is 30 min away from the local parish so we won't be providing accommodation for the Priest but we will be asking him to the dinner.

The church we are using is charging €300 without a priest or alter servents or flowers. The reason we think is we're not from the parish. Sucks but there you go. Now we have to try and find a priest and drag them to the church :(.

While I can understand they need to support the costs of running the place 300 or 400 in trinity's case is a large wack of money. I wonder how the priest of the church will take to being paid by cheque and being asked for a reciept.
