McCullough Pigott beside the powerscourt centre, or Paul Ryan music in templebar do sheet music. You could also try Waltons or Opus II on georges street.

You will find transcriptions of solos around the place alright, in the usual places (Waltons/Opus ii etc), but you're probably better off buying a book like Mark Levine's Jazz Theory, if you want to figure out what's going on in jazz.

There is also a Jazz Hanon Fingering book as well, which has a few solos written out. Mostly for piano players though.
