want to head off for a sly weekend skiing. I know Chamonix is very close to Geneva and a few other resorts too. Any other resorts near Ryanair / Aer Lingus airports?

Chamrousse is dead handy for Grenoble. Get the 6010 bus from the main bus station. 4 euro fare.

Foppolo is very handy for Bergamo airport, most of the hotels will come and pick you up from the airport. However, there isn't enough skiing there for more than a weekend.

Arraba is handy enough from Treviso (Ryanair's idea of Venice) and has a huge ski area, well worth doing.

La Molina is handy from Girona.

From Salzberg you can get to Badgastein.

My personal favourite for a cheap ski weekend is to fly to Paris (always cheap flights to there), get an overnight train to Bourg St Maurice, then spend two days skiing Les Arcs or St Foy or Tignes etc with only one night in a hotel or hostel, train back to Paris, get a morning flight and you are back at work on Monday just a couple of hours late.

Just got back from Cervinia in Italy. Flew into Turin with Ryanair ticket cost all in return 50 euro. Resort is about 70 min away but well worth it as flight leaves at 7.00 am and your on the slopes at 12.00. Tons of skiing and if you pay a little extra on ski pass you can ski Zermatt in switzerland. Only problem i did not like is too many steps to get to first gondolla. But there was 3 meters of snow on the upper slopes and near enough that on the lower so it made up nicely for that.
