Tofu...what do YOU do with it?

    I seem to go through phases of foods. 2 weeks ago it was red lentils...last week it was pearl barley, now Im in the middle of my firm tofu phase.

    So lets be honest, its bland, has a weird texture and not necessarily pretty but it can be tasty, light and gives you the protein fix. Ive been marinading it in tamari, ginger and garlic, then stir frying it which is yummy in my tummy...or I bake it in the oven with soy and seseme seeds; also yummy in my tummy. Im not into deep frying it, or anything for that matter so wondered if anyone had any more ideas that didnt include the above ingredients...just for a change.

    I have been a vegetarian for 14 years and no matter what i do I cant eat tofu, urgh the feel of it. yuck yuck yuck

    the only way i eat tofu is as chocolate mousse :)
    I found the recipe here http://www.veganfamily.co.uk/chocolate.html
    only use about a half tsp of vanilla as it can overpower the mousse.

    Yes, it's bland - but it absorbs the flavour of whatever you marinate or cook it in, so you just have to find the right things to marinate it in or cook it with. Personally, I use a tablespoon of sunflower oil, a tablespoon of soy sauce, some chopped ginger and a clove of garlic as a marinade and I find it works very well. I then stir-fry it with red and yellow peppers, red onions, cashew nuts, broccoli, scallions and baby spinach. (stir-fry the tofu separately from the other ingredients and then mix it in at the end. also put the spinach in at the very end). When making a stir-fry I cut the tofu into very small cubes, about a square centimetre.

    I also have a very nice recipe for vegetable and tofu curry which I will dig up for you later.

    You can make tofu burgers, just mash finely chopped veg, spices and tofu with breadcrumbs, usually make tiny ones or they fall apart :) I also make a type of scrambled eggs with silken tofu.

    My local chinese does the best tofu ever.
    It is crispy on the outside and full of savory juiceiness on the inside.
    Hmm nyom nyom.

    I gave up trying to compete with it. I just buy taifun pre flavored products now. http://taifun-tofu.de/en/

    Thanks for all the ideas everyone.
    Like the sound of the tofu burgers and curry. Always thought those premarinaded/smoked tofu packets look a bit like the preserved flesh from a bog body or something! No offence!:) Maybe its worth a try.

    Speaking of scrambled tofu, juice on georges st do the most amaaaaazing scrambled tofu ever. And the potatoes that come with it are divine.

    What I generally do is...

    Cube it, marinade it, roll it in flour or oats and fry it in sesame oil.

    Fry it with mushrooms, onions, tomatoes and garlic (lots of garlic)

    Bake it after marinading.

    Feck it into a pasta sauce.

    Sure feck it into anything it's good for you!!

    As a veggie, never ever thought i'd get to say this.

    I got food Poisining - from Tofu!!!
    Confirmed by doctor and all.

    sharing my experience:
    Got it in a chinese restaurant, violently ill for 2 days - shaking - sweats - aching muscles & bones- couldn't stand up... the job lot. Will never ever ever eat tofu again.... be warned :o

    Which is, of course, why I called it muttar 'paneer' - note the quotes.

    But you'll find it's not made from either cottage or ricotta cheese. Amazingly enough it's made from paneer cheese.

    Check out the book "I can't believe it's tofu" by Deborah Madison - some fantastic recipes for breakfast, lunch, dinner and desert. My favourites include a Cauliflower Tofu Curry and Breakfast Migas. Dennis Cotter of Cafe Paradiso has a fabulousrecipe for tofu squares - tofu slices marinated in soy sauce, garlic, lemon juice, tomato puree, ginger and water, then sandwiched together with a pureed cashew nut and cumin in the middle and then rolled in flour, dipped in water and finally rolled in dry polenta and fried, served with a pineapple chutney - time intensive but worth the effort. Finally Blazing Salads have a recipe where you cut the tofu into slices about 2" square x 1/4" thick, toss them in a marinade of equal amounts of oil (peanut or canola) and soy sauce, and a couple of table spoons of sesame seeds, stick the whole lot in the oven at the highest setting and bake for 15 minutes turning once - allow to cool and its handy for putting into salads, sambos, or eat on it's own as a snack.

    I myself like to freeze it first. It works better with softer tofu. When thawed, it has a different, crumblier texture which I quite like. I'll then press it and marinate it. After that I like to either fry it till crispy or bake it or whatever
    Either that or simply press firm tofu and use it in stirfries with veggies, etc.
    Oh! One of my favourite things is firm tofu cut up into 1cm cubes, seasoned, and deepfried until very very crispy. I nearly always put in some cumin in the seasoning because it makes it extra nice.

    Desserts made with tofu are good too :)
