lamb stock

    Hi, I haven't seen a good recipe for lamb stock here and was wondering whether anyone has one. I'm gonna make stock for the first time tonight/tomorrow so help would be appreciated.

    I use lamb bones and fat to make stock for soups and cous cous. Frying the trimmings of a shoulder for a long time will give a great flavour - the meaty bits want to be well browned and the fat melted. Add veg as you want, but I always refridgerate the cooled stock and the fat solidifies and can be lifted off as a big disc.

    Thanks. i have four shanks so unsure how much i'd need to use in the stock
