I'd say go with the one that's closest to you.
It's been a while since I've been an active member but AFAIK cork is split into a few regions unlike any other county.
It also has some of the best clubs from what I can remember.

Just has a look on the website macra.ie and couldn't find a list of clubs, I thought there used to be one...
