Was at a wedding in Crete not so long ago (not a million miles away
). The only advice I can give you is make sure that any services you hire; florists, drivers, photographers etc are recommended. The couple who's wedding I was at decided not to use the photographers recommended by the hotel (there was a choice of about 4) and picked one that was cheaper. Unfortunately there was some sort of miscommunication (could have been the language barrier too) and the photographer didn't show up until 9pm that night when the dinner was in full swing!
