I don't know Galway that well myself, but you could always plot a route out on bikeroutetoaster.com. Best I can do I'm afraid :)

Lived in galway couple of years ago. Fantastic cycle...city to spiddel through barna. In spiddel village turn right and pass the garda station. Enter bandit country for miles. Single car road. Good surface and very quiet. Amazing views. Youll cross country and eventually end up on the galway to oranmore main road. Whole thing takes about 90 mins

im not from galway so cant help with a route

but if you get an ordnance survey map, that will give you an indication of the hills and if you go to www.gmap-pedometer.com that will give you the distance. then just bring the map with you when you go cycling.

thats what i do in wicklow

a bit of trial and error and in a few weeks you'll have a few routes you like
