Looking for advice on a wireless room thermostat. How do they work i.e wil they work with any boiler? Are they efficient?

A wireless thermostat is the same as any other stat, except it uses a remote base-station to control the boiler instead of wires direct to the physical thermostat.
If your house is already wired and zoned, then they will make no odds.

Where they come into play is in situations where there was previously no control over the zones (bedrooms vs living areas...) and two or more control valves have been fitted to the exisiting piping to create zones. You then attach a base-station to the valve wiring, causing it to shut when the zone no longer calls for heat; resulting in the boiler shutting down until the zone valve opens again.

See FishDog's post, #6, here for a graphical representation of the above: http://boards.ie/vbulletin/showthread.php?t=2055400462
