Could someone please tell me how to do a selective / gradual desaturation? I know I've done something similar for gradual blurring using channels, but I can't quite remember how. I've created the appropriate black & white channel anyway.
    Thanks for any help.

Layer masks. These allow you to mask certain parts of an image to apply your effect to. Think of them as filters that only affect part of an image. If the mask is black it has zero effect, if it is white it has full effect and grey tones give you intermediate effects.

So you can take you image, duplicate the layer, desaturate it, add a layer mask and apply a BW gradient to the mask to yout taste.

If you have CS3 or CS4 you can use the black and white adjustment layer to change the colour to black and white and then put a gradient fill on it's associated mask to give you the gradation from colour to black and white
