Righto my OH remembers a dish from his childhood with onions sausage meat and potatoes and he is not sure what else. Any ideas ? I'd like to recreate this

Was it a stewed dish? It sounds like Dublin Coddle. There are recipes posted here if you do a search

:DNope, its all done in the oven...... not stewd but roasted. The onion is mixed with the pops and then its mixed with the sausage meat but his memries are sketchy He's a Dub if that helps
