My ma ( God rest her ) used to make what she called Golden Balls.

Cook however many potatoes and then mash them with butter.
Add chopped onion , parsley and thyme.
Roll the mash into golf ball sized balls.
Crush a fair amount of Cornflakes onto greaseproof paper.
Beat 2 eggs into a bowl.
Dip the mash balls into the egg mix and roll them over the cornflakes.
Deep fry for 2 to 3 minuets till they are nice and crispy.

Might be an idea to make a lot , as they are delicious.:D

My ma is an awesome cook to but I'll wait until she's a little older and greyer before I'm arsed asking her recipes.
