I'm planning on visiting southern China then going to hong Kong and then back to China.
Will I need a multiple entry visa for this?
Also, my schedule is pretty fluid - I've booked accommodation for the first week and then planned on seeing where the wind takes me for the next two, is this going to be a problem when getting the visa?

Just get a multiple entry visa for China for a month. That should cover you.
You don't need a visa to enter the Hong Kong Special Administrative Region but you do for China proper.

As Bond points out you do need multiple entry visa. You can get a double entry visa for 2 x 30 (or even 35) day visits i.e. could spend 30 days on Chinese mainland, enter HK, then back to mainland for another 30 days.

Your itinerary shouldn't matter to visa application, we only booked first 2 nights and winged rest, just don't put Tibet down as one of places you plan to visit as that can cause grief.
