    Hey, with the winter upon us, there is nothing better than a good hot pie!

    Anyone got some fail safe recipes?

    Dragon pie
    Serves 4 people or 2 dragon slayers.

    6 tbsp oil
    2 onions finely sliced
    1kg dragon steak cut into 1 inch chunks (Use beef if you can't get dragon)
    5 tbsp plain flour seasoned with salt and freshly ground black pepper
    500ml Beef or Chicken Stock
    1 glass of red wine
    2 bay leaves
    2 tbsp green pepper corns (The ones that come in the brine)
    Whole green chillies to taste
    2 sprigs fresh thyme
    salt and freshly ground black pepper
    500g puff pastry
    1 egg, lightly beaten

    Fry the onions for 20 minutes on a very low heat - they want to be sweet, sticky and golden. Set aside the onions and dreg the beef in seasoned flour, then flash fry in a hot pan. Add the remaining flour and cook for several minutes. Add the red wine and cook for a few minutes, then the onion, stock, bay, green peppercorns and thyme. Next add the whole green chillies - prick each one with a fork to let the heat out. Season with salt and pepper then cook the stew on the hob for about thirty minutes. It wants to be a rich gravy - if too thick, thin with a little water; too thin and cook down until the gravy is thick enough.

    Allow to cool slightly before pouring into a pie dish, then top with a puff pastry lid. Brush the top with egg wash and bake at 190c for 30 to 40 minutes until the pastry is risen and golden.

    Serve with boiled spuds and green beans.
