Multi Layer Foil Insulation

Hi all, We are building a sunroom with the internal roof raised.
I've been offered some multi layer foil insulation which I had planned to rock wool inside the joists and then on battons, to leave an air gap, run the foil up the joist an then horizontally across the ceiling and back down the other joists.
    Can this be done?
I was worried about condensation forming especially on the foil at the horizontal point.
Will the joints have to be taped, if so what would you recomend.
Thank you in advance, a true beginer ;)
